Keihan is Amami Oshima Island's representative local cuisine, a dashi chazuke style dish where white rice is topped with shredded chicken, sweet simmered shiitake, kinshi tamago shredded omelet, pickled papaya, green onion, nori seaweed, and peel of tankan citrus, then poured with hot chicken broth simmered for hours. Its origin goes back to Edo period when officials of Shimazu clan were hosted in northern Oshima with luxurious dishes using wild birds like woodcock and pale thrush.
