Shirokuma is Kagoshima's signature shaved ice dessert whose birthplace is the Tenmonkan Mujaki cafe founded in 1946 in Kagoshima City. Its second-generation owner Kubo Takeshi invented the dish in 1947 and began sales in 1949. The name originates from a can of condensed milk bearing a polar bear label; the shaved ice topped with white condensed milk resembled a polar bear. An alternative theory traces a similar ice treat to 1932-33. The ice uses pure ice shaved into fluffy flakes, drenched in homemade condensed milk and syrup, then decorated with mandarin, pineapple, cherry, raisin, sweet bean paste, and agar jelly. Initially luxury fruits were added for occupying Allied forces after World War II, turning it into a deluxe dessert.
