Satsuma-age, called tsuke-age locally in Kagoshima, is a traditional fish cake dating to Edo period when Shimazu Nariakira promoted industrial reforms in 1820s-30s. Its prototype chikia-gi came from Ryukyu Kingdom. Fish paste is mixed with tofu, egg yolk, haimochi-zake, an ancient Kagoshima sake made with wood ash for preservation, and sugar, then deep-fried to fluffy texture. Documented in the Ministry of Agriculture, Forestry and Fisheries' Nippon Traditional Food Encyclopedia, it has been prepared across the prefecture for celebrations and daily side dishes.
