An Illustrated Japan / Saga / Life & Daily
Saga sake brewery tours explore Saga's sake region, famed yet overshadowed by shochu image of Kyushu, but since 2021 receiving distinction as first sake GI in Kyushu 'GI Saga' for its mellow sweet and fuller umami character. Sag's soft water from Sefuri and Tara mountain ranges and local brewer's rice Saganohana and Yamada Nishiki coupled with proprietary yeast Hagarer Ya: Bisto strain SAWA-1 capable of apple/melony aromas leads to fruity rounded style accessible to new sake fans. Flagship Nabeshima from Fukuchiyo Shuzo won Champion Sake at International Wine Challenge 2011 SAKE Category, now operating Japan's first sakagura auberge Onshuku Fukuchiyo, a 230-year old minka refurbished over ten years, one group per day, and in May 2025 opened FUKU, an 80 m² room designed by Kengo Kuma. At both inns, guests can enjoy Kaiseki by chef Takuma Nishimura and Yuichiro Kotake trained at Kyoto's Arashiyama Kitcho and Spain's Asador Etxebarri with sake pairing in Arita ware vessels. Other kura such as Shichida and Azuma Ichi and Amabuki provide tastings and craft-beerlike experiments, often including stays, making Saga popular with overseas enthusiasts who praise how Saga's subtle acidity balances rich meaty dishes and vegetable rich Japanese cuisines, delivering contemporary Japanese brewing identity.
