Awaodori Chicken is Tokushima's premium jidori local chicken, developed over twenty years by Tokushima Prefecture Livestock Research Institute by crossing Shamo fighting cock prized for firm muscle with White Plymouth Rock for fat deposition, certified as JAS-defined jidori requiring more than 80 days raising, free-range rearing after 28 days, stocking density below 10 birds per square meter, and strict feed composition. The meat balances firm bite from exercise, lean red depth, and sweet intramuscular fat with low odor, making it distinct from commodity broiler that grows in 50 days. In Tokushima izakaya the iconic dish is bone-in Awaodori grilled rotisserie called Hone-tsuki Ippon Yaki, whole thigh marinated in 17 spices including cumin, paprika, garlic and charcoal-roasted until skin is crisp and interior juicy, served with shredded cabbage and sudachi.
