An Illustrated Japan / Tokushima / Life & Daily
Sudachi is a small green citrus species native to Tokushima Prefecture, roughly four centimeters in diameter, its production concentrated over 98 percent in Tokushima, making the prefecture indisputably Japan's top producer and holder of geographic identity. Brightly aromatic with yuzu-like fragrance yet sharper acidity and thin peel rich in juice, it is treated by locals not as occasional garnish but everyday universal seasoning, similar to lemon in Western cooking. Peak harvest runs from August to early October when green sudachi is harvested at peak juiciness and placed halved alongside matsutake dobin-mushi steamed pot, sanma Pacific saury salt grill, Awaodori chicken charcoal grill, Tokushima ramen, Iya soba, and chikuwa tempura. The sudachi flower is designated Tokushima Prefectural flower, and peel contains abundant limonene, vitamin C, and flavonoids often grated into ponzu sauce, dressings, jams, marmalades, shochu infusions, and even sudachi beer and sudachi salt sweets. In local izakaya a small dish of halved sudachi appears automatically, squeezed into water, shochu, sour cocktails, and udon. Agritourism orchards around Kamiyama, Sanagochi and Kami-katsu offer picking experiences in late summer, while processing workshops teach ponzu blending, essential oil distillation, and culinary use. As symbol of everyday Tokushima food culture, sudachi illustrates how humble citrus became regional branding and export product featured at international food fairs. During sudachi season from late August, harvest festivals occur across Tokushima, and orchard owner systems and picking experiences on Kamiyama highland attract city visitors. At Tokushima City Central Wholesale Market morning auctions grade sudachi, with premium grade packed into gift boxes shipped nationwide. In recent years sudachi juice craft beer, craft gin, sudachi kosho chili paste and other processed goods have increased, featured at department store fairs in Tokyo and Osaka. Distilled sudachi essential oil is exported to European aromatherapy markets.
